The development of this Open Education Resource would not have been possible without the work done previously by other authors. I am grateful to the Open Access textbooks by Dr. Maureen Zimmerman and The University of Hawaii. They were used as the basis for the development of this version of the text for Pennsylvania State University. Chapters and sections were borrowed and adapted from the above existing OER textbooks on human nutrition. Without these foundational texts, a lot more work would have been required to complete this project. Thank you to those who shared their work to advance the use of open texts.
