The development of this Open Education Resource would not have been possible without the work done previously by other authors.  I am grateful to the  Open Access textbooks by Dr. Maureen Zimmerman and The University of Hawaii. They were used as the basis for the development of this version of the text for Pennsylvania State University. Chapters and sections were borrowed and adapted from the above existing OER textbooks on human nutrition. Without these foundational texts, a lot more work would have been required to complete this project. Thank you to those who shared their work to advance the use of open texts.

Also, I would like to thank all the hard-working individuals at Penn State who helped me turn the vision of an Open Resource textbook into a reality. Starting with the ACT@PSUprogram, which is a partnership between TLT and Penn State University Libraries, along with funding from Penn State Executive President and Provost Nick Jones’s office. The ACT Program Faculty Development grant gave me access to  Julie Lang, Amanda Larson, Bradley Antill, and Wade  Shumaker. They were instrumental in helping me to create activities within the text, check accessibility, assure consistency, and assist me in determining that all of our resources met current copyright laws.
